BABY WATERCRESS SALAD

Cucumber, olive salad
Notes of apple and quince, alongside some nutty complexity, soft spice and a lean mineral streak. The attractive notes of orchard fruits lead through on to the palate which is layered with conference pear and white blossom. Long and fragrant on the finish.
Butternut squash purée, sage gremolata
Rosé, Susana Balbo
A lovely pale salmon pink color and a fine florality, with hints of wild strawberry and cherry. It shows freshness and clarity, with crunchy acidity, red currant and strawberry flavors and a pithy, refreshing finish.
