Banshee Wine Dinner
Wednesday, January 31
Featuring Guest Speaker Steve Graf, Co-Founder & Director of National Sales
Banshee Wines was launched in 2009 with eight barrels of coveted Sonoma Coast Pinot Noir and the initial intent to make wines that tasted like the best California had to offer, priced so that everyone could enjoy them. The Banshee team developed strong relationships with the owners and growers of some of the best and most coveted vineyards in Sonoma, working in lock step with them to produce wines of depth, purity and balance. Today, their mission remains the same as it was in those early days – to craft distinctive wines that over-deliver in every possible way.

Scallops and pork belly
Sonoma County Sauvignon Blanc 2016
Floral bouquet of lilacs and daisies leads into a medium weight blend of honeydew, lime, pear and sea salt flavors that linger on the fresh, well-integrated citrus line that runs through the long, tangy finish.
Lemon beurre blanc and mashed potato
Sonoma Coast Chardonnay 2016
The nose leans towards the orchard fruit range – showing both apple and pear but also hints of tropical fruits and vanilla bean. Moderate weight with extraordinary depths of flavor. The finish is all energy with mouth-watering citrus notes.
BEET & PERSIMMON CARPACCIO
Pine nut, micro green
Marine Layer Pinot Noir 2014
A nose of freshly cut rose petals followed by vivid, concentrated raspberries. In the mouth, a light-medium weighted body shows a purée of wild red berries, plum and mint leading into a long, lip-smacking finish.
DOMESTIC LAMB CHOP
Zucchini Parmesan, pistachio aioli
Valravn Zinfandel 2015
Layers of richness and complexity wrap around a core of wild strawberry and raspberry. Scents of mocha, espresso roast, violets and ripe red berries. Rich on the palate with flavors of framboise, blackberry compote and hints of licorice-laced black pepper.
Napa Valley Cabernet Sauvignon 2014
Dark plum, cocoa, blackberry and sage aromas with powerful, very well-delineated flavors of dark chocolate-covered cherry, macerated strawberry, wild herbs, mineral and touch of caramel. Well-balanced with fine tannins, deep and multi-dimensional.
